Nearly there...it's crunch time

Just a short post today as I've been gallivanting, visiting a very good friend overnight.  We hadn't seen each other for ages and it was just lovely to catch up in person.  Plenty of cups of tea were consumed and we had our fair share of biscuits too whilst chatting.  Which brings me to today's recipe: gingernut biscuits.  I do love anything with ginger in it and biscuits with tea are one of my favourite indulgences.  These are crunchy and have a bit of spice to them - delicious!

Gingernut biscuits (makes 20)

Ingredients:
50g Butter
4 tbsp Golden Syrup
50g soft brown sugar
175g flour
1 tsp baking powder
2 tsp ground ginger

Method:
  1. Preheat oven to 190C (conventional oven) / 170C (fan oven). Grease two baking sheets.
  2. Melt the butter, sugar and golden syrup in a pan until the sugar has dissolved. Leave to cool slightly.
  3. Sift flour and ground ginger into sugar mixture and stir well.
  4. Using wetted hands make walnut sized balls of the mixture and arrange well spaced out onto the baking sheets. Flatten slightly then bake in the centre of the oven for 15-20 minutes.
  5. Remove from the oven and transfer to a wire rack to cool.

  1. Those look yummy. Just perfect for a visit like the one you have been having with your friend. Do you ever make pfefferneuse? Maybe it is just a holiday cookie? Anyhow my husband loves those. I have never made them but maybe someday.

  2. Oh, I've never made the pfeffer ones - they are a kind of Christmas biscuit in Germany but I could eat them any time of the year. Might have to make some now you've mentioned it :-)

  3. Oh my goodness a recipe for real Gingernut Biscuits. My huz will love these because Gingernut Biscuits are his all time fav bikky :-) This recipe will be a keeper. All of your recipes I have tried have been extra good and I have had great success with them :-)

  4. This post brings back a lovely memory for me, my Mum used to bake my Dad gingernut biscuits in Cape Town, how he loved them and so did I. This recipe looks great and I definitely will make them on Sunday. Thanks Kirsten, Ann x
